Assistant Director of Food & Beverage

Job Overview: We are seeking a passionate and experienced Assistant Director of Food & Beverage to lead and elevate the dining experience at our ultra-luxury resort in the Maldives. This leadership role requires innovation, precision, and a strong commitment to excellence in creating unforgettable guest experiences for an international clientele.

Key Responsibilities

Lead daily operations across all F&B outlets, ensuring exceptional service standards.
Collaborate with culinary and service teams to deliver innovative dining concepts.
Drive revenue growth, manage costs, and optimize profitability.
Oversee menu planning, pricing, and curation of food, beverage, and wine offerings.
Implement and monitor hygiene, safety, and service quality standards (Forbes/LQA).
Train, mentor, and develop a diverse team to achieve operational excellence.
Introduce creative promotions, themed events, and guest engagement initiatives.
Foster sustainability practices, team wellbeing, and community engagement.
Liaise with suppliers, chefs, and department heads to ensure seamless operations.
Analyze P&L reports, forecast revenues, and manage budgets effectively.

Key Competencies & Requirements

Minimum 3 years’ experience in ultra-luxury remote island resorts, preferably in pre-opening projects.
Proven track record of delivering high-end guest experiences.
Strong leadership, training, and team development skills.
In-depth knowledge of global F&B trends, wines, and cocktails (WSET preferred).
Solid understanding of OHS, hazard identification, and risk management.
Excellent communication and interpersonal skills.
Financial acumen with expertise in budgeting and forecasting.
