Job Summary: Paradise Bay Resort Malta is seeking a skilled and experienced Sous Chef to join our culinary team. The Sous Chef will assist the Executive Chef in overseeing kitchen operations and ensuring the highest standards of food quality, presentation, and hygiene are maintained.

Key Responsibilities:

  1. Menu Planning and Execution:
    • Collaborate with the Executive Chef to plan and develop creative and innovative menus.
    • Assist in the preparation and execution of high-quality dishes that meet the expectations of our guests.
    • Ensure that all food items are prepared according to recipe specifications and presentation standards.
  2. Kitchen Management:
    • Supervise and coordinate kitchen staff in the absence of the Executive Chef.
    • Monitor food production processes to ensure efficiency and consistency.
    • Maintain cleanliness and organization in the kitchen, including equipment and workstations.
  3. Quality Control:
    • Conduct regular inspections of food products to ensure freshness and quality.
    • Implement and enforce food safety and sanitation standards to comply with regulations.
    • Address any issues or concerns related to food quality, taste, or appearance.
  4. Training and Development:
    • Provide training and guidance to kitchen staff on proper food preparation techniques and safety procedures.
    • Foster a positive and collaborative work environment that encourages teamwork and professional growth.
  5. Inventory Management:
    • Monitor inventory levels of food and kitchen supplies and place orders as needed.
    • Minimize waste and control food costs by implementing portion control measures and inventory tracking systems.


  • Proven experience as a Sous Chef or similar role in a hotel or resort setting.
  • Culinary degree or certification from a recognized culinary school is preferred.
  • Strong leadership and communication skills.
  • Ability to multitask and work effectively under pressure in a fast-paced environment.
  • Knowledge of food safety regulations and best practices.
  • Creative flair and passion for culinary excellence.
