Executive Sous Chef Job Description:

As the Executive Sous Chef, you will play a key role in assisting the Executive Chef in overseeing the culinary operations of the hotel, ensuring the highest standards of food quality, presentation, and guest satisfaction.

Responsibilities:

  1. Assist the Executive Chef in planning and implementing menus, recipes, and food preparation techniques in accordance with hotel standards and guest preferences.
  2. Supervise and coordinate the day-to-day activities of the kitchen staff, including chefs, cooks, and kitchen assistants.
  3. Train, mentor, and motivate kitchen team members to maintain high levels of performance, creativity, and professionalism.
  4. Ensure compliance with food safety and sanitation standards, HACCP guidelines, and local health regulations in all kitchen areas.
  5. Monitor food costs, inventory levels, and kitchen expenses to achieve budgetary targets and maximize profitability.
  6. Collaborate with the purchasing department to source high-quality ingredients, equipment, and supplies while maintaining cost efficiency.
  7. Lead by example in culinary techniques, cooking methods, and plating presentations to inspire and mentor junior chefs.
  8. Maintain cleanliness, organization, and safety in all kitchen areas, including storage facilities, equipment, and workstations.
  9. Coordinate with other departments, including F&B outlets and banquet operations, to ensure seamless execution of culinary services and events.
  10. Assist in menu development, food tastings, and special promotions to enhance the guest dining experience.

Requirements:

  1. Proven experience as an Executive Sous Chef or senior leadership role in a hotel or upscale restaurant environment.
  2. Culinary degree or equivalent certification from a recognized culinary institute.
  3. Strong leadership and management skills, with the ability to inspire and motivate a diverse team of culinary professionals.
  4. Extensive knowledge of international cuisine, culinary trends, and contemporary cooking techniques.
  5. Excellent organizational, communication, and interpersonal skills.
  6. Ability to thrive in a fast-paced, high-pressure environment while maintaining composure and professionalism.
  7. Creative flair, attention to detail, and a passion for culinary innovation.
  8. UAE-based candidates or those willing to relocate will be given preference.
